These are my favourite bread bannetons – and I have tried many different ones! I have had them available at my sourdough cooking workshops for some time – with great feedback for their functionality. The bannetons are easy to use, with no sticking when a dusting of rice or semolina flour is applied before adding the shaped dough.
After use, leave to dry in a warm place then store in a dry position and they will last for years. The fabric liners are washable – I wash mine about once a month, or after rising dough with additions such as turmeric or raisins. The purpose of a bread banneton is to hold the shape of the free-form bread dough as it rises at room temperature, or in the fridge.
Two shapes to choose from to fit approx. 800g – 1kg loaf (this is the weight of the Rustic Sourdough Bread in my cookbook, The Homemade Table):
- Round – 23cm (W) x 8cm (H)
- Oval – 25cm (L) x 15cm (W) x 8cm (H)

Outer banneton is made from cane, with a cotton liner. I use both banneton shapes depending on the type of bread I prepare. The most important factor to consider is to choose a banneton that will hold the shape of the bread dough that best fits your baking vessel such as a round cast iron pot or an oval enamel oven dish. Or get both!
