I am now offering my popular sourdough workshop as an online class from my home kitchen (open to NZ and Australia only). This is a small group workshop held via Zoom with plenty of opportunities for questions. You can choose to cook along with me to prepare a bread dough (allowing 2 hours extra time to complete the steps after the class, plus the baking time the next day). A list of ingredients and equipment (you will need a healthy sourdough starter) will be emailed prior to the workshop. Plus, choose an optional ‘Sourdough Pack’ to be couriered to you before the workshop, including sourdough starter and flour (available for NZ residential addresses only – no rural addresses as overnight courier can’t be guaranteed).
I am enjoying teaching in this new format. I have had many requests over the years as my in-person workshops fill up fast. Plus I can reach further afield to places I am unable to visit (or a good refresher for those who have attended a workshop in the past). An online class is different from in-person workshops but there are other benefits of teaching out of my home kitchen. I have access to all my breadmaking tools (including a stoneground flour mill), plus the multimedia teaching options available via the Zoom platform. After teaching cooking workshops for 16 years I am enjoying this new addition to my class offerings. I am still planning to teach in the main centres – Wellington, Christchurch and Auckland – plus more intensive workshops planned for Nelson (stay tuned, and come and visit our beautiful city).
Using three simple ingredients – flour, water and salt – combined with basic technique and timing, the most flavoursome and nutritious bread can be created in your own kitchen. For a decade I have been preparing sourdough bread for my family (and teaching others this skill for 8 years), and have specifically designed my recipes to fit around a modern lifestyle. This traditional technique of bread making slowly ferments the flours and grains to improve their flavour, while also enhancing starch and gluten digestibility and nutrient availability. In this workshop you will learn:
- How to maintain a healthy sourdough starter – this is key to baking great bread. Note: I won’t be demonstrating gluten-free bread at this workshop.
- Wholemeal Sandwich Bread with variations to use different flours and flavour variations i.e. adding seeds, dried fruit and spices.
- Learn to prepare an Overnight Rustic Sourdough Bread – this is a free-form bread that is shaped by hand and risen in a banneton (or similar).
- Plus how to make ingredient additions to the dough i.e. dried fruit and spices.
- Discussion on flour for bread making + where to source quality NZ-grown flour and grains.
- + a recipe pdf and bread variations.

*The Zoom link will be sent prior to the workshop date – a quiet house/kitchen and laptop or tablet are recommended for best viewing. Please make sure you are familiar with using Zoom and have the app downloaded before the workshop (if needed). The meeting will be open 15 minutes prior so I have time to sign everyone in, and the workshop will start promptly at the start time.
You will need: A laptop or device for viewing, and a pen and paper to take notes. If cooking along an ingredient and equipment list will be emailed prior. Choose an optional ‘Sourdough Pack’ to be couriered to you prior to the workshop including a sourdough starter plus flour to make a loaf of bread (100% NZ-grown spray-free and freshly-milled organic wholemeal flour). *Available for NZ residential addresses only – no rural addresses as overnight courier can’t be guaranteed, but it can be sent to a residential address nearby.
